Wegmans Cave-Ripened Medium Crèmeux de Bourgogne with Truffles Soft Ripened Cheese

What a beautiful and unique cheese. Cave-ripened by Wegmans. Made in France. Product of France. Strong and sharp, but so, so smooth to the taste. As soon as you open the package, the truffle scent embraces you. It is spectacular. I only wish Chip were here to experience this one.

This review is of the medium version of the cheese. There is a mild version, but why? Why be mild and tamper with the boldness of a cheese too good to just eat on a cracker.

Wegmans Cave-Ripened Medium Cremieux de Bourgogne with Truffles

Type

Cow’s milk with a top notch ingredient list: Pasteurized Cow’s Milk, Cream, Double Cream Cheese (Pasteurized Cow’s Milk, Pasteurized Cream, Citric Acid), Truffle (Truffle Tuber Aestivum Vitt, Extra Virgin Olive Oil, Natural Aromas), Salt, Animal Rennet, Ferments.

Texture

Smooth, rich and buttery. Nothing like you would expect from cheese-it’s outrageous!

Aroma

Because it is cow’s milk, there is no assault on the senses that a goat cheese might be for some people.  The intensity of the truffles is the first thing you smell, even before the package is opened.

Look and feel

It is smooth and silky; easy to spread.  Too bold and intense for a simple cracker. A warm and crusty baguette is perfect.

Wine pairings

Well, there are many possibilities. Whatever you choose, this cheese demands a wine capable of accompanying the high fat content while escorting the smooth, but intense truffle aroma.

  • Sauvignon Blanc: A crisp, high-acid bottle with bright citrus and mineral highlights provides a vibrant, refreshing contrast to the pungent, earthy truffle undertones.
  • Pinot Noir: Its subtle berry fruit notes and light tannins marry with the mushroom-like truffle taste and the creamy consistency of the cheese.
  • Prosecco: Always a possibility!

Remember- it is not about the cost of the wine; it is 100% about the taste!

Where to buy it

Wegmans! A special shout to Eric, the Manager of the Cheese Department of the Dewitt Wegmans in Upstate New York.  He is kind and wonderful and extremely knowledgeable.

About Me

KarenHello and welcome.
I am often asked, “What is Pasta on the Floor?”
Pasta on the Floor is different for everyone. It is a recipe that tells a story and inspires them to try something new. For others, stories of family, joy, loss, and hope engage with them. This brings me a great deal of happiness. I do not take myself too seriously, so be forewarned the subject matter is open and truthful. In many ways, Pasta is a tale of life, and I think you will find familiarity and commonality as you scroll through these pages.
