Laura’s Crustless Quiche
So, I’m trying to lower my carb in take so I made this delicious crustless quiche. It’s so easy and you can use whatever is in your garden or frig.
I took three strips of bacon, sautéed them in olive oil until it was crispy.
Then I added red, yellow, orange and green peppers, one whole onion. Let them cook down until a little soft, then add 2 cups spinach, handful of grape tomatoes, (cut in half); add a cup mushrooms, let simmer. Add salt & pepper. You can add any seasoning or veggies you want.
In a bowl, mix 5 eggs with 1 cup heavy cream, salt, pepper, 3/4 cup cheddar cheese.
Add mushroom mixture to egg mixture, stir together, put in 10-inch round pie pan. (lightly butter the pan)
I set the oven on 400 degrees and cook until it starts to bubble and gets a little brown, maybe 30-35 minutes.
I’m telling you, when you take a bite of this, you won’t even miss the crust. All the flavors of the vegetables with the eggs and bacon, and the cheese, it’s like Heaven.
